Pegasus Airlines and GTech used machine learning to make in-flight café service smarter, winning 2nd place in the Ecosystem Benefit category at Yapay Zeka Arf Awards.

Pegasus, GTech AI-Powered Waste Optimization Project

Pegasus Airlines x GTech - Measurable Impact: 32% increase in per-passenger cafe revenue, 30% increase in profitability, 7% reduction in food waste

Together with Pegasus Airlines, one of Türkiye’s largest and fastest-growing carriers, serving 37M+ passengers annually across 156 destinations in 54 countries, GTech delivered the Waste Optimization Project: an AI-driven system that ensures the right quantity of in-flight café products is loaded for every flight.

The Project:

  • Flight-by-flight demand forecasting adapted to route, season, and timing
  • Smart loading that eliminates both overstock and shortages
  • Faster, more consistent operations with less manual intervention
  • Machine learning and optimization models applied to in-flight café stock management

Achievements:

  • +32% increase in per-passenger café revenue
  • +30% increase in per-passenger profitability
  • -7% reduction in food waste rates
  • 2nd place, Ecosystem Benefit category, Yapay Zeka Arf Awards (organized by BThaber Gazetesi)

We are proud to have enabled this success as the technology partner in Pegasus Airlines’ digital transformation journey.

By combining flight-by-flight demand forecasting with machine learning-based optimization, GTech helped Pegasus Airlines move away from one-size-fits-all café stock loading and toward a model tailored to each route, season, and time of day. The result was a measurable jump in both revenue and profitability per passenger, alongside a meaningful cut in food waste, recognized externally with a 2nd place finish in the Ecosystem Benefit category at the Yapay Zeka Arf Awards.
